Solomon Island Curry Leaf & Sweet Potato Fritters






Ingredients:
1/4 cup rice flour
1/2 cup iced water
2 teaspoons baking powder
1 egg, lightly beaten
1 teaspoon ground cumin
1 teaspoon cayenne
1 1/2 cups grated sweet potatoes
1 1/2 cups grated parsnip
30 curry leaves, julienne
1/4 cup vegetable oil
8 ounces goat cheese
Micro greens, to serve
Sea salt and black pepper

Directions
Mix rice flour, water, baking powder, egg, cumin, cayenne, sweet potatoes, parsnip, curry leaves, salt and pepper in a large bowl.
Heat the oil in a large frying pan. Add 2 tablespoons worth of mixture to the pan. Flatten slightly and cook, in batches, for 1 to 2 minutes each side or until golden brown.
Serve warm, topped with goat’s cheese and micro greens.
